Busy busy busy…
Things have been a little busy…
We just made Mushroom Risotto and Lasagna with Bolognese sauce. I have to say it was pretty good! That was the most recent cooking labs. For dessert I made chocolate Mousse and biscotti.
Now we have 3 projects to finish- 2 on Japan and one on Israeli couscous… Due in one week…
But school is good!!
Thought I would let my readers (if I have any:P) know what’s going on :)
I can’t wait for strawberry shortcake!!!!!!! But I still hate baking :)

Week 5 through 7…

Sorry folks… been a little busy with school and whole bunch of other things:

So weeks 5 through 7 will be a short summary of what we did instead of getting more in depth.. I’ll go into the details on a later day…

We basically, for our cooking labs, made potatoes in different shapes, sizes, and taste…. kidof.. This was our less exciting lab since we had to pipe some potatoes while some were baked with cheese on top….

Our other lab for cooking was Vegetable cookery… another not-so-exciting lab… we made boiled broccoli, roasted vegetables, and some braised legumes…

This week in cooking lab was Egg Cookery… again, this wasn’t the best lab either. We made poached eggs, Quiche, and Omelette….. fun…. not. It was also the first time that I don’t think I did pretty well. Usually when my chef comes over at my table he usually likes my food alot! but today he only said that my Quiche looks good, but that I have to work on my Omelette and Poached eggs…. Omelette because it was smaller (i used 2 eggs instead of 3… or else it would have been perfect!!) and poached eggs, because it was almost perfect, but the egg white totally covered the yolks….

Bakery was alrite too…. we made an apple pie, creme caramel, and baked custard from weeks 5 through 7.

We had a Nutrition test on tuesday… which was also the day that CHEF MICHAEL SMITH came to our college and class.. and later a bunch of friends and I staled his room till we got to meet him!!

But it was worth it! He is an amazing guy! Not to mention tall! Like seriously tall!!

Week 4… boy does time fly..

Ok so this week went by really fast!!! I almost want the year to slow down- everything’s going by so fast.

It wasn’t a bad week, though…

On Monday we had banquet and production (apparently our third-last class before we begin Butchery) and my team had to make Puree of Split Pea soup and Potato Chowder.

It was really nice of my friends to come help us out since we were short on hands for my team; plus, one of my team mates felt like she was going to pass out, so that just left me and one of my other friends on the group. So it was awesome that my friends helped me.

It turned out great, and I was pleased with it. My friend accompanied me out on the “salting”-the-soup part. Hehe.. and it turned out great!

Tuesday was actually a pretty slow and dragged day after our Demo for Culinary skills- for which we discovered we were making three salads on our lab on Thursday.

Surprisingly, Food theory was pretty dragged this week than it usually is… I don’t know why! Our professor’s awesome!!

But the Nutrition class was the worst…!! We did absolutely nothing. I almost fell asleep during a video they showed, but my elbow kept sliding and jerking my head up!!

Needless to say, my friends and I were extremely happy when Tuesday came to a close.

Wednesday wasn’t that bad, I guess. We had math in the morning and got let out earlier than class time, so we ended up having a three and a half hour break till our next class. So….. we decided to go to the rainbow market after lunch and grab some crepes. Well, one of my friends instigated this thought, which later spread throughout the rest of the group, and then we couldn’t resist.

So we had our crepes and got ready for Baking class.

In baking we made Choux Paste, Eclairs, and Cream puffs all filled with Choux Paste and the Eclairs, only, dipped in Chocolate Fondant! Oh yes!! It was good, Alright! Well… the eating part… not the baking part. I told myself that I will not bake once school is over!!! But it went well. Well…um… my pastries turned out to be monstrous in size, but it was still good!

Then Thursday rolled around.. it was a long day, too! Well at least for me… didn’t feel the best, didn’t sleep much, and then Business Communications class first thing in the morning! Ok, the professor is great! but the class…. not so great!

But I can’t say it was a bad day.. We had our Cooking lab today and we made three salads: Caesar Salad, Italienne Vinegrette, and Potato Salad.

At first, when I started, I had no clue what I was doing… I was just following my recipe.. But I got myself together, and it ended up pretty well!! The chef liked it (but he said I needed some more salt in the water when I was boiling the potatoes), so I was happy!

And now my weekend starts!! I’m extremely exhausted, but I still have one more thing to finish- My Sanitation exam which is on Sunday at 3:00 p.m. Yes.. Sunday… But hey, It’s not that hard of a course at all, so I don’t think it should be any problem.

Week 3 comes to a close

Hmm… Let’s see what happened this week:

Wednesday:

Ok this was math and Baking day. We had our first math quiz on Wednesday and it was so incredibly easy. The class is so simple- its almost boring most of the time. Other than that, nothing much to say about that class.

The real fun was baking class… ok i wouldn’t say fun because I officially decided that I would never bake after school is over, but it was way better than math. I didn’t realize how hard baking could be! Its not that simple when our Chef is really particular about everything. But the end result was good! We made shortbreat cookies! They weren’t that bad, actually. I was happy with them. Then at the end of the class we paid $4 for a full box worth of cookies that we made so we could take them home.

Thursday:

This was Business Communications and Cooking lab day. Only fun part of the day was the cooking part. Business Com is a BORING class. Seriously boring class. It’s about how to write properly and effectively. But hey, I guess I’ll learn something out of it. I want to try to look at all the classes that I don’t like through an optimistic point of view.

Cooking, on the other hand, was AMAZING. I mean, that’s why I’m in this field, correct? We made Beef Consommé and Cream of Celery Soup. It wasn’t that much different than last week’s stock, but it still was. We had to be much more careful with the Beef Consomme but the soup was really easy. The end result was ravishing. The chef said that he really liked my Consomme- he said it was really rich. He also said that he really liked my soup, and his facial expressions said even more! So I was extremely happy :) At the end of class I took my Cream of Celery soup home; I wanted to take the Beef Consomme home too, but I didn’t have my second container with me.

This week, overall, was not bad at all. Learned a few things, and had tons of fun. My friends are awesome! And my class peers are awesome too! So, let’s see what next week has in store for me….how-to-make-beef-consomme

Ok folks,

So new this week is… um let’s see:

Monday we had Banquet and Production so I was on Making stock with two of my other classmates. We had to make 200 gallons of stock for the whole school, pretty much, and it wasn’t so bad at all. The rest of the class we’re divided into different groups as well with each group doing different things.

The different teams did the following:

Soups for Chef’s on the Run

Scotch Broth

Cream of Tomato Soup

Sandwiches for Chefs on the Run

Club Sandwich

Entrees for Chefs on the Run

Irish Lamb Stew with Dumplings

Roasted Stuffed Shoulder of Lamb

Herbed New Potatoes

Brussels Sprouts Paysanne

Macaroni and Cheese

Creamy Coleslaw

Oh Yeah!!! Does that sound good or what!! You bet it was! Then we got to cook hamburgers for ourselves so it was nice :)

Today we had our Culinary Skills I demo, and BOY! was it good! The only problem with the class is that it’s in the morning and you feel so hungry smelling all that beautiful aromatic food!

For demo, our chef made a Beef Consommé, Tomato Puree Soup, and Cream of Celery Soup; and for our lab on Thursday we have to make the Beef Consommé, and the Cream of Celery Soup. After the demo, we went up and tried the Consommé and the Cream of Celery Soup and, Oh! was it heavenly!!

Looking forward to the lab!

Then we just had a Food Basics I class with an amazing Chef! Chef Wolfman! He’s pure jokes but it’s so much fun! The only reason I’m actually alive in that class :)

And then right after that we have Nutrition! Ok, so I don’t like Nutrition, but what I hate even more is that while the teacher is teaching, students are talking at the back of the class! I mean, yeah, you guys don’t like the class but at least give the teacher so respect here! Thankfully the students who were being so impotently rude aren’t in my labs so I’m happy.

Honestly, I have to say, I actually learned somethings from Nutrition today, so maybe my thoughts are changing for that class- I don’t know.

Other than that, it was not that bad of a day at all :)

Tomorrow’s baking and you’ll just have to wait and see what’s on the recipe agenda for tomorrow :) Too bad you probably won’t get to taste it :P well, most of you ! :) but hey, be happy for you, right? :D

This week at George Brown

So this week wasn’t that bad!!

We had our first baking lab and cooking lab so it was pretty exciting.

First off, let’s start with baking. Baking’s on Wednesday and we have our lab and demo all in one class of about 4 hours. All we did in baking is make Icing and Pipe them in certain shapes. Mind you, as easy as it sounds, its not. We have to be, or rather, our Chef was really particular about our shapes. We have to drag it a certain way to make a certain talk and have to have it a certain height and similiraty. But it tasted sooooooooooooooooooooooooooooo good!!! :P

Next thing is our Cooking lab for Culinary Skills 1. It’s a really good program. Our chef, Chef Zambotti is really cool! We had to make a chicken stock and out of that make a clear vegetable soup, but had to be particular about our cutting technicques and sizes.  The different cuts we had to do are “Carre” “Brunoise” “Paisanne” “Baton” and “Julienne”

The Chef liked my soup (just said I needed a bit more vegetables) but he said he liked it and when he tasted it, he looked at me and had the expression of “WOW! THATS FANTASTIC” :) so that made my day!

Also! I have awesome friends! We’re a group of four and each of them are so cool in their own way! I’m really glad to be part of the group :)

My first Monday class…

Okay so today I thought it was going to be another orientation day since it’s our first Monday-class….

Nope, I was completely wrong!!! We dove right into it. Like seriously dove right into it. Our chef’s pretty cool though. He’s been cooking since ‘64 i think…. and he’s cooked in like 12 different countries!!!

Oh, and on top of that, I forgot my uniform and knives today since I didn’t think we were going to have class… so I had to borrow some from the colleege and wash it before tomorrow so I can return it.

Other than that, not that bad of a day :)

Our class was divided for doing different parts of the meal,  so I was put on a team tha was making an Aioli Sandwich with grilled chicken, lettuce, tomatoes,  cheese, and avocado :)

The other teams made soup ( I can’t remember what kind), Spanish Chicken and Rice, and I can’t remember what the last team made.

But it wasn’t bad for our first cooking lab :)

I wasn’t happy waking up at 5:45 in the morning, but it’s okay. Class was from 8:00 am to 11:00 so that’s all for school on Monday and I’m not complaining one bit :)

Ok, so today I learned how to tie my “neckerchief”…. yes, a “Neckerchief”….

It’s almost like tieing a normal tie… almost. And yes, ofcourse I didn’t get it right the first time, but I’ll get it everntually!!

Other than that I had a boring communications and writing class in the morning at… guess where.. Rainbow Cinemas Theater 2!!! LOL hows that!!! IN a cinema, and theater number 2! It was so hot in there an I didn’t even have my Chef’s uniform on!! The intro was alright, but my class is going to suck!! I already hate the idea of learning how to write business proposals and all of that stuff, but I guess I have to do what I have to do.

I have my Culinary Skills lab in about a half an hour (its a cooking lab) so let’s see how it goes. I’m actually going to have my full uniform on today so I guess it’s kinda cool :D

Well, I got to go, but I”ll keep you update!! Oh, yeah, I had my Dessert and Pastries baking orientation yestarday!! It was awesome!!! Ok, so baking isn’t really my thinking because you have to be so darn precise, but the pastries and desserts sound soooooooooo good!!! :D

My first day of school wasn’t bad at all. It was pretty easy since all we had were class orientations and instructions.

Funny thing was I had a fever the night before (100.2) to be exact, but I still went. My dad came to drop me, though. So it started at 8 in the morning and I left at 4:30 is getting back home at approximately 5:30ish?….. Other than that, not bad at all. School internet service is pretty good, and my Professors ROCK!!!! I love them!!!! They’re really fun and very qualified!!

Im excited for this year at college!!!
